1- Roast Capsicum & Eggplant Pizza

Vegetable pizzas are becoming more and more popular as people realize how much fat traditional pizzas made with salami, sausage and other high-fat meats contain.
Using flour tortillas as a quick pizza base is a great idea and is also much lower in fat and calories than regular pizza bases. Chutney has been used on these pizzas as this gives the pizza a great flavor.
Ingredients
1 tbsp. olive oil
8 small flour tortillas / pita breads
2 large capsicums, sliced thinly  
1 large eggplant, sliced
50g low fat grated cheese (50% less fat)
1/2 cup chutney or 2 tbsp. pizza sauce
Method
Preheat oven to 180C.
Pepper and eggplant are greased with olive oil and placed on a hot barbecue plate or press sandwich until light brown. Set aside.
Place flour tortillas on large tray.
Spread with chutney and sprinkle each lightly with grated cheese.
Place capsicum and eggplant over the top.
Cook in oven for 10-12 minutes or until cheese is golden brown.
Serve with your favorite salad.

  2- Mini Mexican Pizza

This low fat Mini Mexican Pizza recipe combines the wonderful flavors of Mexican food with one of our favorite Italian 'cuisines', pizza.
Although this is a mini pizza, it is a reasonable sized dish for lunches, snacks (especially for kids) or entertaining.
Ingredients
 1 small pizza base - in the supermarket fridge section or pita bread
100g Vegetarian Chilli Mix
1 tbsp. pizza sauce
1 tbsp. light sour cream
Drizzle of sweet chilli sauce
1 tbsp. reduced fat cheese
Method
Preheat oven to 190c.
Place 1 pizza on an oven tray lined with baking paper 
Spread pizza sauce over base of pizza.
Spread Vegetarian Chilli Mix over the base.
Sprinkle Cheese on top and bake in oven for 15 mins.
Once cooked take out and drizzle sour cream and sweet chilli sauce on top.

  3- Mini Potato and Rosemary Pizza

This mini Potato and Rosemary Pizza recipe may looks  normal but it  has a mix of flavor and is very simple to make.
Despite being vegetarian, it actually provides a good source of protein, which helps us stay feeling fuller for longer. This is useful if you're trying to cut down your total calorie intake.
Ingredients
1 small pizza base – in the supermarket fridge section or pita bread
1 tbsp. pizza sauce
1 tbsp. caramelized onions
Drizzle of olive oil
1 potato, sliced very thinly, skin on
Sprinkle of rosemary
1 garlic, crushed
1 tbsp. reduced fat cheese
Method
Preheat oven to 190C.
Place 1 pizza on oven tray lined with baking paper
Slice the potato very thinly. 
Dribble a tiny amount of olive oil on base, spread with teaspoon.  Spread crushed garlic on top.
Spread pizza sauce over base of pizza.
Spoon 1 tablespoon of caramelized onion.
Layer potato on the base.
 Put cheese on top of potato and then some rosemary.  Bake in oven for 15 min.

  4- Mini Chicken and Cheese Pizza

This low fat Mini Chicken and Cheese Pizza recipe is perfect for those who love pizza, but also want to shed a few pounds or eat a little healthier.
The great thing about this pizza recipe is how flexible it is. For example, you can use Pita bread if you don't have access to mini pizza bases, use BBQ sauce instead of pizza sauce and try adding pineapple and caramelized onion for added flavor.

  5- Vegetarian Pizza Muffins

Although this is a vegetarian recipe, those who like meat  can add some shaved lean ham or bacon (visible fat removed of course) if they prefer.
English muffins make a great mini pizza base. They are inexpensive, fast to cook, tasty, and best of all, portion controlled for those of us watching our portion sizes.
If you're trying to lose weight, we suggest you stick with the low fat cheese though. This recipe is low sugar, low fat and a good source of protein.
Ingredients
1 whole meal English muffin, halved
1 tbsp. tomato paste or pizza sauce
1 tbsp. reduced fat grated cheese
1 tbsp. red capsicum strips
1 mushroom, chopped
1 tbsp. sliced onion
1 tbsp. sliced black kalamata olives
Sprinkle of herbs
Method
Preheat oven to 180C.
Place muffins on an oven tray lined with baking paper. Spread pizza sauce on each muffin
put low fat cheese over each muffin and top each with capsicum, mushroom, onion and olives then sprinkle with herbs.
Bake in oven for 10 minutes or until browned.
Serve immediately.
